Recipe of the week: Baked Apple with Walnuts

Remember “an apple a day keeps the doctor away” and with the additional walnuts you’re getting a good dose of antioxidants, protein and omega-3 fatty acids.

Ingredients (serves 2):

– 2 apples, cored
– 1 cup unsweetened apple juice
– 1/2 teaspoon cinnamon
– 8-12 walnut halves

Method:

1. Preheat oven to 180 degree celsius
2. Core the apples and stuff the walnuts into the middle of the apples
3. Place them in a baking dish and pour over the apple juice
4. Bake for 20-25 minutes until the apples are soft
